This is a salad that my mom has been making for our family most of my life. I made it for the first time for my man the other night and we spent some time justifying how much we ate by pointing out all the healthy things involved in this salad. I mean, it is mostly vegetables! Broccoli, onions, dried cranberries, raisins (fruit!) and even sunflower seeds. So basically we can call it a salad, made better with bacon and a mayo vinegar dressing!
This salad is great for a potluck or BBQ, or in my case, as a side dish to dress up a lack-luster “healthy” piece of grilled chicken.
Broccoli Bacon Salad
- 2 heads of broccoli chopped– and shredded stems if desired
- 1 small red onion – diced small
- ½ lb bacon, fried and crushed
Options:
- Sunflower Seeds
- ½ cup raisins or dried cranberries
Dressing:
- 1 cup Mayonnaise
- ½ cup sugar
- 2 Tbsp wine vinegar
Mex well and toss with salad. Let set in fridge for at least a half hour before serving.
